Chocolate Chia Pudding

 This is a very simple chia pudding that is good on its own for breakfast or a snack.

You can enjoy it as-is, or use it as a base and add different ingredients (fruit, nuts, granola).  Make it your own with the add-ins!

Ingredients:

  • ¼ cup chia seeds
  • 1½ cups coconut milk
  • 4 dates
  • ¼ cup raw cocoa powder (unsweetened)
  • 4-6 strawberries, sliced
  • 4 mint leaves (optional)

Instructions

  1. Soak the chia seeds in the coconut milk for 20-30 minutes, in the refrigerator.

  2. Add the chia mixture, dates, and cocoa powder to your blender and blend for about 3 minutes.

  3. Transfer into 4 serving containers and top with strawberry slices.

  4. Chill in the fridge for an hour.

  5. Make it look fancy with an optional mint leaf next to the strawberries. We eat with our eyes too, so make your food look enticing. Enjoy!
