No-Bake Protein Cookies

Calling all cookie monsters!! You CAN enjoy cookies and still make progress toward your health and fitness goals. Who knew?!

Thanks to the protein (which fills you up) in this recipe and oats (which keep you full longer), just one will satisfy that hankering for something sweet. Without fail, I use Shakeology for all protein-based, non-bake recipes. It packs a powerful nutrient punch above and beyond just protein. Use vanilla Shakeology for traditional peanut butter cookies and chocolate Shakeology for when you want that decadent Reese’s flavor. ?

No-Bake Protein Cookies

Ingredients:

  • 1 cup old fashioned rolled oats (gluten-free)
  • 2 cups plant-based protein powder (I use Shakeology)
  • 1/3 cup peanuts, unsalted
  • 1/4 cup natural, organic peanut butter, unsalted
  • 1/4 cup coconut oil, melted
  • 4 Medjool dates, pitted
  • 3/4 cup+2 tbsp warm water

Instructions

  1. Line large baking sheet or a cooling rack with parchment paper and set aside. In a mixing bowl, combine oats, protein powder and peanuts.

  2. In a blender or food processor, blend the peanut butter, coconut oil, dates and water.

  3. Pour into the bowl with dry ingredients and stir until fully combined. (The batter will be thick.)

  4. Using a spoon to scoop the dough, roll into golf size balls and flatten with your hands.

  5. Place cookies on prepared baking sheet.

  6. Refrigerate (uncovered) for 1 hour and enjoy!
