Smashed White Bean, Basil, & Avocado Sandwich

The next time you’re craving a different kind of sandwich, make this!  It’s seriously super delicious and you can add all sorts of veggie toppings to your sandwich to make it unique every time. The healthy fats from the avocado plus the complex carbs and fiber from the beans will keep you full, too.  Trying to keep it low carb?  Pass on the bread and use the mixture as a dip served with crudites!

Smashed White Bean, Basil, & Avocado Sandwich

Ingredients

  • 1 heaping Tbsp whole grain dijon mustard
  • salt and pepper to taste
  • 1 15 oz can white beans, drained and rinsed
  • 1 avocado, sliced
  • juice of half a lemon
  • 2 Tbsp fresh basil leaves, finely chopped
  • for the sandwich (optional): baby spinach, romaine, arugula, tomato slices

Instructions

  1. Pour white beans into a large bowl and mashed a little with a potato masher. Add in the diced avocado and lemon juice, then mash until there are just a few chunks of bean and avocado left. Stir in the mustard, basil, salt and pepper, then taste and adjust flavors as necessary.

  2. Spoon onto a sandwich, salad, veggie bowl, or just eat it as is. I like to use this as a dip with crudites. SO yummy!
