ALMOND FLOUR BLUEBERRY MUFFINS

Sometimes you just want a muffin with your morning coffee!  Typical muffins are loaded with sugar and unhealthy fats.  Here’s a great alternative that will satisfy that muffin craving.

ALMOND FLOUR BLUEBERRY MUFFINS

  • 2 cups almond flour
  • 2 eggs
  • 2 egg whites
  • 1/4 cups maple syrup
  • 1/2 tsp baking soda
  • 1 Tbsp apple cider vinegar
  • dash of salt
  • 1 tsp vanilla extract
  • 2 Tbsp coconut oil
  • 1 cup blueberries, frozen

Instructions

  1. Preheat oven to 350 degrees F

  2. Place all ingredients except blueberries into a food processor and blend until smooth.

  3. Once completely mixed, fold in the blueberries.

  4. Spray muffin tin and even scoop batter into tin.

  5. Bake for 25 minutes.

  6. Remove from oven and place on a rack to cool.

  7. ENJOY!!
