No Cook Mediterranean Hummus Pizzas

I don’t know about you, but the last thing I want to do is turn on the oven during the heat of summer. That is one of the things that makes this recipe a big winner in my book! No cooking required!! The fact that it has all the flavors of the Mediterranean and doesn’t sit like a brick in your stomach are added bonuses. You can change up the flavor each time you make these by trying different hummus flavors and varying your toppings. The combinations really are practically endless. ENJOY!!

No Cook Mediterranean Hummus Pizzas

INGREDIENTS

  • Naan bread or pita, or your favorite pre-cooked pizza crust
  • Hummus, homemade or store-bought*
  • Cherry tomatoes, sliced in half*
  • Cucumber, diced*
  • Red pepper, diced*
  • Red onion, diced*
  • Kalamata olives, sliced*
  • Feta cheese*
  • Fresh herbs for topping (I used mint from my garden)*
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar
  • 1/2 tsp Dijon mustard
  • 1/4 tsp dried oregano, or Italian seasoning
  • Salt, to taste

Instructions

Here are your instructions:

  1. Spread your bread or crust with a big spoonful of hummus and then top with chopped vegetables.

  2. Add the olive oil, vinegar, mustard, oregano and salt to a small bowl and whisk until combined. Drizzle the top of each pizza with a small spoonful of vinegar and sprinkle with fresh herbs.

  3. Cut pizzas into slices and enjoy!

Recipe Notes

I didn’t specify exact amounts for the hummus and vegetables because you can top your pizza with as much or as little as you’d like!
